Brooklyn Guy Makes Pizza Pies Fly
I grew up not far from DeRango's on High Street. (Now "Chubbies.") Back in the day, they had big windows looking in on the kitchen, fronted by a large table where they used a machine to resize the pizza dough, but still gave it a whirling toss up into the air occasionally. It was something to watch them do that, and then apply the toppings. When they were busy, they had two guys doing it. Nothing that I saw rivaled what shows in the video above, but it brought back some good memories.
Whatever type of pizza you grew up on, that's the type that you think is authentic. For me, it was DeRango's papery, thin crust pizza cut into little squares. I thought the whole world cut pizza into little squares until I left Racine.
I saw this guy on tv at the competition. It is amazing how they can throw that dough.
I think I could eat pizza everyday. Brusha's had great pizza. Bernie's (lathrop and washington) now makes a thin crust pie with their recipe. It is almost as good as my childhood memories.
