not the greatest day at work, and as always, every wednesday I 'get' to come back for a manditory meeting in the afternoon... yippe skippy - not... at least I only have 2 regular days and a quickie 4 hour Saturday to get out of the way, then off thru Monday, work 3 days then have a 3 day weekend, I could get used to this :)
Oprm (about 6 lbs cut in half) tastes best when made on the grill. Lots of lemon juice, butter (one stick), slices of tomato and onion, salt and pepper.
DO NOT TAKE THE SKIN OFF…it will hold together better until you serve it.
Put a slab on a sheet of aluminum foil (skin toward foil) rub a bunch of butter on it, then the lemon juice, salt and pepper and lay the slices of tomato and onion on it.
Then rub more butter on the next slab and place on top of the first (skin upwards) and rap everything tight with foil so butter does not leak out.
Cook on hot grill for about 15 to 20 minutes and turn over and cook another 15 minutes. You’ll hear it sizzling away, this is good.
Serve with coleslaw, Italian bread, your favorite wine and of course beer!
Actually this is how I make salmon on the grill….!!! Buy a nice hunch of salmon, it will cost you $25 to $30 but it is well worth it.
How many will it feed….damn I don’t know, I’m a pig and eat for 2 or 3, but if I was to take an educated guess…6 to 8.
